Sab’s Simple Banana Pancakes

These healthy pancakes are super quick (which you know I love! ) and are a great recipe to spice up your usual morning breakfast routine! Bonus: Kids love them as well.

Prep Time: 2 mins

Cook Time: 4-6 mins

Makes: About 8 small pancakes

Carbohydrates: 27 grams 

Protein: 14 grams

INGREDIENTS

1 banana
2 eggs
1 teaspoon extra-virgin olive oil

DIRECTIONS

1. Peel the ripe and mushy banana and put it into small bowl. Mash it, until it achieves a smooth paste.

2. Crack and stir in the eggs and make sure the whole mixture is blended and smooth. Attempt to make it chunk-less.

3. Sabrina likes to spice them up by adding the optional ingredients of a dash of cinnamon and/or a 1/4 cup of blueberries, if you want to add a little more flavour to the pancakes!

4. Heat a griddle or nonstick pan on low-medium heat.

5. Grease pan with olive oil, coconut oil or nonstick cooking spray.

6. Pour the batter into the pan in small pancake circles, about 1/4 cup. Cook until golden (about 1 minute), then flip your pancakes.

7. Healthiest option is eating them plain, or you can add a small drizzle of pure Canadian maple syrup, honey or agave nectar.

Recipe is based off of my friend Sabrina’s quick and easy pancakes, because she knows I hate cooking for long periods of time! Ha!
